 Il Ragù alla bolognese(Bolognese Meatsauce, The Original)

What you need:

  • 300 grams minced beef 
  • 150 grams unsmoked pancetta
  • 50 grams carrot — finely chopped
  • 50 grams celery — finely chopped
  • 50 grams onion — finely chopped
  • 30 grams triple concentrated tomato puree
  • 1/2 glass red wine
  • 180 milliliters fresh milk
  • olive oil
  • salt and pepper

Now, put your apron on and prepare yourself for 3 hours of taking care of your Ragù…while you are swinging to italian music!

  • Fry the pancetta gently in a little olive oil until it starts to release its fat. Be careful not to burn.

  • Season with salt and pepper, cover and cook very slowly for 3 to 4 hours.
  • Stir occasionally and if it looks like drying out, add a little more milk.
  • While you eat drink a Chianti or a Sangiovese wine and possibly play this perfect song ….
